AMERICAN WAGYU SPECIALTY MEAT CUTS

Shop this section for unique food items, gourmet meats and specialty cuts that you won’t find anywhere else. Here’s where you’ll find new American Wagyu meat from our product experts. At Snake River Farms, we pride ourselves in offering unique specialty meats only available at an artisan butcher shop.


Bavette:
A term that means "bib" in French, the bavette is a steak that's cut from the loin primal of the animal. Full bodied in flavor, the bavette steak naturally has a wide coarse grain similar to the outside skirt. 

Denver Steak:
This cut comes from the chuck subprimal and is located under the shoulder blade, which typically makes for a tougher cut of meat because it gets much more use. However the Denver steak, or what we like to call "Zabuton," is from an area of the shoulder that is much less used and is more marbled and tender. 

Teres Major:
Also known as the petite tender, this hard-to-find cut is nearly as tender as the filet mignon. The teres major, named for the muscle in which it is sourced, is hard to come by because it must be skillfully cut from the shoulder clod or chuck primal.

What is American Wagyu Black and Gold Label?
Our Gold label cuts contain more marbling than our Black label cuts. But even our Black label steaks and other cuts have marbling superior to USDA Prime beef. Read about the difference.
How long will my SRF products last and how should I store them?
You can safely store your SRF products in the freezer for up to 6 months for optimal quality. Per USDA guidelines~ if meat is kept at 40 degrees (refrigerator temperature) or cooler~ you can safely store in the refrigerator for 7 days once thawed.  More details.
