A term that means "bib" in French, the bavette is a steak that's cut from the loin primal of the animal. Full bodied in flavor, the bavette steak naturally has a wide coarse grain similar to the outside skirt.
This cut comes from the chuck subprimal and is located under the shoulder blade, which typically makes for a tougher cut of meat because it gets much more use. However the Denver steak, or what we like to call "Zabuton," is from an area of the shoulder that is much less used and is more marbled and tender.
Also known as the petite tender, this hard-to-find cut is nearly as tender as the filet mignon. The teres major, named for the muscle in which it is sourced, is hard to come by because it must be skillfully cut from the shoulder clod or chuck primal.
