Prime Rib
Preheat your oven to 250 degrees.
Prepare your roasting pan by covering with foil and placing the rack in the pan.
Clean the roast by removing any excess fat or tough sinew from the outside of the roast.
Truss the roast to ensure a uniform shape and even cooking.
In a food processor, blend together the kosher salt, black pepper, garlic cloves, thyme and extra virgin olive oil to form a paste.
Generously rub the prime rib with the paste and place it on the prepared roasting rack.
Place the roast in the oven and cook for approximately 2 hours and 30 minutes or until the internal temperature reaches 115 degrees Fahrenheit for medium rare; 125 degrees Fahrenheit for medium; 135 degrees Fahrenheit for medium well.
Remove the roast from the oven and increase the oven temperature to 500 degrees.
Once your oven is preheated, place the roast back in the oven to sear for 5 minutes until crispy and golden brown.
Remove the prime rib and allow to rest for 15 minutes before removing the twine and slicing.
Serve as desired.
