Watermelon Skewers
Place cubed melon pieces onto a large bowl. Combine the zest, juice, and mint and toss with the watermelon.
Thread the watermelon cubes onto skewers and lay flat on a sheet pan. Drizzle the skewers evenly with honey and a very light sprinkle of flake salt.
Garnish with more mint and lime wedges.
Serve cold.
