Snake River Farms Teres Major
In a recent unofficial poll of people in our office, the Teres Major was voted “Most Favorite Cut of Beef.” You might not find the Teres Major at your local grocery store, but it’s well known by butchers, beef insiders and uber-foodies. It’s an uncommon item because it requires a skillful touch to cut if from the chuck (also known as the shoulder). Like the popular, and more expensive, tenderloin, this is a little used muscle so it is naturally very tender. Each Teres Major is shaped like a small tenderloin roast and can be cooked or grilled whole, then sliced into medallions. It can also be used for upscale kabobs, fajitas or other ethnic dishes. No matter how you prepare it, you’ll be amazed at the tender texture, rich flavor and delicious eating experience.

Not for me
So I took these two pieces of meat and trimmed em of the silver skin, then I threw em in a bag to marinate in salt and pepper over night finally cooked em on my grill over direct heat maybe 3 minutes per side not more then that for sure, first side burned a tiny bit maybe an inch by half an inch at the center of the meat other one was okay, they seared off pretty weird no fat at all, even when trimming the silver skin I noticed there was no fat. Dont grill if you do, then I suggest dont do it in direct heat very long and keep temp inside under 140 is my best opinion didnt have a 2nd one to try again but overall one of the steaks was okay the other got a bit overcooked but thats not why I'm giving one star, it's just I didnt like this meat at all!!! I love most of the wagyu I buy but this was not a great steak flavor and fat less almost completely never even saw one drop literally one drop fall the whole time I cooked it.... not happy maybe as a roast it would be good but as a steak without trimming it thin or something it's totally terrible I was gonna toss it but my dad ended up eating it because he said it's about as good as normal beef steak his buddies make.... I wont be ordering this cut again anytime soon but I will be reordering some other stuff, most everything else was superb so far.

Tender meat but work is required
The meat itself is tender but there is a lot of work to do trimming and removing the silver skin.

MUCH SMALLER THAN ADVERTISED
I'm a huge fan of this cut, in general, but was disappointed in the size of the pieces that arrived, which had a total combined weight of only 1.3 lbs ($37/lb), rather than the advertised approx. weight of 1.8 lbs ($27/lb), which I found to be a pretty meaningful discrepancy. I'd planned to serve this to my family of 4, but am afraid it will likely only feed 2-3 max.
I would keep that in mind when determining the quantity of your order and the value vs. other cuts.

full bodied flavbor
mesquite smoked these steaks and grilled to a fine medium rare. very tender with a robust beef flavors. to me, better than filet mignon.

Outstanding for grilling
This was by far one of the best cut of meats I have ever cooked on my green-egg. The flavor, marbeling, and tenderness of the meat makes the tres major a must have for us!
