    the rack seem a little small , but it was perfect. Very little fat,and the the meat was full of flavor. A little bit more to buy, but worth every penny!!!

  • Very Baby Back Ribs

    Ok, Since you asked for a review:
    I could complain about the price per pound, which is a bit high. but I knew that going in when I purchased them, Given the size ,I slow smoked two slabs, one for each my wine and myself. My wife loves really small back ribs, and even though the local markets say they are 'baby back ribs' they are all about the same. '
    I have been cooking ribs for years so my wife is pretty use to them, , but I have to admit , the other night when I served her the SRF little ribs she actually said " There are the best ribs I have ever had, " From her, that doesn't come lightly.
    She didn't eat the ribs raw, some credit should go to my method of slow smoking them in my Big Green Egg, along with my homemade Hoisin -Brown sugar sauce. Nevertheless, an accolade from Ms Fussy that they were "the best" was enough to send me to the computer this morning to take advantage of the October "Pork Month Sale "and order more. Keeping her happy is worth the price alone.

    These are simply delicious-smoked in the weber with BBQ sauce'
    They are small, tender and very flavorful-I will buy these again and again!

  • Good, but not great

    No doubt this pork is much tastier than your average store bought pork ribs. That being said I went back and forth between giving these a three or a four star rating. The first deduction is for the meatiness or lack there of. I realize these are baby backs and also come from the leaner Berkshire pig, However, I've had baby backs from this breed in the past and these were a bit of a disappointment regarding meat on the bone. Now to the second star deduction. I couldn't knock it on size alone as I had read all the reviews noting that these ribs were very very small. Even knowing that I was a bit shocked when I saw them. Actually, I just had to smile... They were so cute, like miniature toy ribs.. Anyway, I didn't let that stop me from getting them in the smoker. Like I said at the top, these ribs were very very tasty. The decision to withhold the fourth star was based on size/meatiness vs. price or the overall value of what I got for what I paid. I would likely buy these all day long If they were in the $15 range. I know I won't buy these again at full price and not likely even at the current sale price ($22). I have a few racks of the st Lewis cut ribs that'll get smoked this weekend with a review to follow.

    Sousvide for 48 hrs, and finishing them in the grill for 5 minutes, just perfect....
