I fix the Wagyu whole
"I fix the Wagyu whole tenderloin every Christmas. I top the roast with plenty of butter (2 sticks) and onions (at least 2, sliced, sometimes slightly precooked in microwave) on a rack in pan, and cook in hot oven (preheat to 500*, turning down to 400* after putting roast in) and cook until internal temp is approx 130*/135*(rare -- usually 40+ min or so, but always checking with meat thermometer). Remove from oven, cover loosely with foil and let rest about 15 min, during which time it continues to "cook" and ends at a perfect medium rare. I do fold and tie the narrow end so that the roast is approx. the same thickness the whole length. It turns out beautifully every time. Absolutely the best whole tenderloin on the planet !!!"
