Snake River Farms pork shanks are the starting point for a delicious and hearty, slow cooked meal. Â They are delicious slow cooked with root vegetables until the pork is fall-off-the-bone tender or cooked Osso Buco style with white wine.
These are hind shanks from 100% Berkshire hogs adding the rich flavor that is unique to Kurobuta pork. Each shank weighs about one pound and has two large internal bones. These are not visible in the raw shank, but are exposed as the pork slowly cooks.
The pork shank comes the hind leg of the hog. The lean and fat is slightly frenched so that the shank bone is visible. This cut has a high content of connective tissue which breaks down after slow cooking to produce meat that is extremely juicy and flavorful.
