Unlike non-heritage breeds, Snake River Farms pork is a striking crimson color which chefs and food scientists acknowledge is a true indicator of high quality pork. These are hand cut and trimmed with the bone exposed for a stunning plate appearance. Serve these beautiful Berkshire pork chops simply grilled or prepared with a classic stuffing.
Please note there can be some variation in size with our natural pork chops. Each bone-in rack contains 10 to 12 bones. We hand-cut each chop to include a bone and the normal taper of each rack can translate to some chops that are larger than others. We specify a minimum size of 4.5 oz. and the chops can go up in size from that target weight.

Kurobuta pork chops are a delicious change from commodity chops. Here are some tips to make sure they turn out juicy and flavorful.
Be sure to completely thaw your pork chops before cooking.
Internal temperature is the most accurate way to know if your pork chop is done. The USDA recommends 145°, but experiment with slightly lower temps to maximize flavor.
Like steaks, rest pork chops up to 10 minutes before serving to let the internal temperature equalize and allow the juices to be reabsorbed.
Kurobuta pork is delicious with just salt and pepper, but they also take well to ethic flavors and spice.
Finish your chop with a light sprinkle of flaky salt for a nice presentation and an appetizing salty crunch.
Pork chops are cut from the pork loin. This section of the hog is similar to the beef loin in both anatomy and the fact that tenderest cuts are sourced from this primal. The primary muscle that is found in chops is the longissimus dorsi.
The loin is the source of the most tender cuts of pork which is the origin of the term “high on the hog.”
