Coffee Dry Rub & Whiskey Wet Rub

While most people might use olive oil or yellow mustard to help their rub adhere to the meat, the grill masters at Westland use use their American Oak Single Malt whiskey as it provides a light coffee and chocolate notes, tenderizes the the meat, and creates a great surface for your favorite dry rub to adhere to.

To fully enhance the flavor and bring out the notes of coffee and chocolate from the roasted malts used in the whiskey, finish with the Westland dry rub, a perfect addition to steaks, tri-tip or brisket.

 

 

Ingredients

Wet Rub

  • Westland American Single Malt whiskey - American Oak

Westland Dry Rub

  • 8 ounces coarse ground pepper
  • 8 ounces Kosher salt
  • 2 ounces ground coffee
  • 2 ounces cinnamon
  • 2 ounces brown sugar

Wet Rub

Pour 1 oz. of Westland American Single Malt directly over the surface of the meat and rub in thoroughly. An alternate method is to pour the whiskey into a container with meat, making sure to coat both sides. Let it rest in refrigerator overnight prior to grilling.

Westland Dry Rub

Mix all ingredients well and sprinkle over all sides from a distance of 8-12 inches from the meat to ensure an even application. Note: The recipe can be scaled up or down. Just make sure you make enough so the meat can be well coated.
