Burger Guacamole

By: Alvin Cailan

Chef Alvin Cailan is skilled in Asian and European cuisines and made a name bringing sophistication to breakfast sandwiches at the legendary L.A. restaurant, EggSlut. Yet, despite all his culinary success, burgers are his passion; as seen in is wildly popular YouTube series, The Burger Show

When we asked for his favorite burger tips, he was happy to share. “When making burgers at home you have to throw out the old tips like ‘two minutes on each side’ the key to a delicious burger is the first sear. To get an ideal sear you have to place your seasoned Snake River Farms burger patty on the grill/griddle on medium high heat and let it cook until the patty is fully caramelized which means a nice deep brown color. If it’s gray, you haven’t reached full flavor mode. Once you’ve got a nice crusty sear on the first side, give it a flip. Don’t cook the second side of the patty as long as the first (think pancakes, once the bubbles form you flip and let it cook for a second) burgers are similar. Get the sear on the first side, flip and add your slice of cheese. Once the cheese is melted the burger is ready to be plated. Bonus tip, If you’re a thick burger patty lover, make sure you let that patty rest for 5 minutes before serving.”

Chef Cailan’s simple, but spectacular recipe for Burger Guacamole is one of our favorites. The secret ingredient that sets it apart is yuzu kosho, a Japanese condiment with yuzu (a super sour citrus fruit), chiles, and salt that explodes with flavor and depth. Mix up a batch and add it to your favorite burger today!!
