The flat iron is a relative newcomer to the steak scene but has been a butcher’s secret for years. Cut from the chuck (shoulder) the flat iron is a fantastic combination of rich beef flavor and tender, meaty bite. This steak is amazingly versatile, simply throw it on the grill or prepare with your favorite marinade for an extra kick of flavor. Steak Temperature GuideHere are the magic numbers you’ll need to determine when your steak is cooked to the degree of doneness you most prefer. The internal temp is when the steak should be removed from the heat. The steak will continue to cook so the temperature will rise during the rest period.

|Medium Rare||Red, warm center||120°F|
|Medium Well||Pink center||140°F|
|Well||No pink||Not recommended|
*Consuming raw or undercooked meats may increase your risk of foodborne illness. The USDA recommends an internal temp of 145°F and resting for at least 3 minutes.

Thoroughly enjoyed the DRR Flat Iron steaks. Grilled them in a cast iron skillet. Served with a tossed green salad and a baked potato. Every bit as good as the steakhouses downtown.

Excellent taste and very tender. I will buy again. I only wish it came in size cuts of 12 to 16 ounces.

First time ordering from Snake River Farms, would definitely order again. This cut was amazingly tender and flavorful, and by far the best steaks we've ever had at this price level.
We lightly rubbed it with rosemary and salt a few hours prior to cooking, then seared it on the stove about 5 minutes on each side, adding butter and garlic towards the end.
One thing to note is that when the steaks thawed fully the packages leaked a bit, but it's nothing a kitchen towel padded underneath can't take care of. All in all a great experience, and we're definitely stocking up on this!
