Steak Temperature GuideHere are the magic numbers you’ll need to determine when your steak is cooked to the degree of doneness you most prefer. The internal temp is when the steak should be removed from the heat. The steak will continue to cook so the temperature will rise during the rest period.

Another Excellent Cut!
Finally got around to cooking these from my initial order. I am not really a huge Filet fan, but this bone in filet was absolutely delicious and as tender as could be. Pan seared in cast iron with EVO, good Irish butter, some shaved garlic and a sprig of Thyme and Rosemary. 4 minutes per side yielded a beautiful medium rare steak. I will be watching for these to go on sale. As a side note, both steaks I received were a bit larger than the advertised weight. I appreciate that type of lagniappe!

Much ado about nothing.
The Manhattan filet was much better, more marveling, better flavor. First time trying a bone-in filet, other filets tried are more favorable and you eat the whole thing without working around the bane. Better value leaving the bone out!

Filets Bone-In and Boneless!
Ordered both bone-in and some boneless Filets. Both types were very high quality and wonderful tasting. Just a bit of salt and pepper seared on my cast iron plate. Definitely some of the best steak I've ever eaten.

Superb Bone in Filets
I ordered both the prime and Waygu bone in filets. Very tender. Cooked each of them at the same time with only salt for seasoning. Each steak had excellent flavor with a noticeable difference. Not sure I had a preference.
Will buy again.
