The flat iron is a relative newcomer to the steak scene but has been a butcher’s secret for years. Cut from the chuck (shoulder) the flat iron is a fantastic combination of rich beef flavor and tender, meaty bite. This steak is amazingly versatile, simply throw it on the grill or prepare with your favorite marinade for an extra kick of flavor. Steak Temperature GuideHere are the magic numbers you’ll need to determine when your steak is cooked to the degree of doneness you most prefer. The internal temp is when the steak should be removed from the heat. The steak will continue to cook so the temperature will rise during the rest period.

Ordered 16 - 4 down and happy campers
Was a bit reticent buying steaks online. Have had other brands as gifts and wasn't impressed. All we do is season well with coarse salt. We’ve cooked 4 steaks, grilled 2 on our PK, and 2 in cast iron to a perfect mid rare, all were brilliant, tender, juicy, and flavorful. We normally buy whole tenderloins because the flat iron is a bit more difficult to find. If the other 12 are as good as the first 4 we’ll definitely be ordering more. I highly recommend if you like good beef. Delighted customer.

Damaged in transit
These steaks came in loose in box. There was a tear in the srf bag and packages came in contact with the dry ice whose bags were also damaged. The SRF box was damp when it was dropped off. When these steaks were thawed there was blood on the napkins of which pics were taken and credit will be issued. I did prepare the other flat iron steaks which leaked slightly and the taste was off putting. I may have just not trusted the packaging so it tainted my review.
