Flat Iron Steak
The flat iron is a relative newcomer to the steak scene but has been a butcher’s secret for years. Cut from the chuck (shoulder) the flat iron is a fantastic combination of rich beef flavor and tender, meaty bite. This steak is amazingly versatile, simply throw it on the grill or prepare with your favorite marinade for an extra kick of flavor. The 8-ounce size makes it easy to get the right portions for your busy weeknight meals or laid-back weekend get-togethers.
"...To be honest, mail-order steaks are fantastic if you are in a steak-deprived area. I like the stuff from Double R Ranch." ~ Kenji Alt Lopez, Managing Culinary Director of Serious Eats and Author of the James Beard Award-Nominated Column, The Food Lab.
Steak Temperature GuideHere are the magic numbers you’ll need to determine when your steak is cooked to the degree of doneness you most prefer. The internal temp is when the steak should be removed from the heat. The steak will continue to cook so the temperature will rise during the rest period.
|Rare||Red center, very cool||110°F|
|Medium Rare||Red, warm center||120°F|
|Medium Well||Pink center||140°F|
|Well||No pink||Not recommended|
*Consuming raw or undercooked meats may increase your risk of foodborne illness. The USDA recommends an internal temp of 145°F and resting for at least 3 minutes.

First time ordering from Snake River Farms, would definitely order again. This cut was amazingly tender and flavorful, and by far the best steaks we've ever had at this price level.
We lightly rubbed it with rosemary and salt a few hours prior to cooking, then seared it on the stove about 5 minutes on each side, adding butter and garlic towards the end.
One thing to note is that when the steaks thawed fully the packages leaked a bit, but it's nothing a kitchen towel padded underneath can't take care of. All in all a great experience, and we're definitely stocking up on this!

Best home cooked steaks I've had
First time ordering from Snake River farms, will definitely be coming back for more!
We picked up a four of these flat irons with some of the wagyu top sirloin, and these were amazingly tender and flavorful.
The top sirloins were great, but these were by far our favorite. Rubbed with rosemary and salt half a day prior to cooking, brushed off rosemary prior to cooking, seared in olive oil for 5-6 minutes on each side with some crushed garlic and butter added towards the end.
Well worth the price! Am planning on stocking up on these. One thing to note though is that all four of the packages slightly leaked when the steaks thawed out. Nothing that a paper napkin under the steaks couldn't solve.

Grilled it up on the Primo to Medium. Super tender with great taste. Would buy again and again.
