Roast Temperature GuideHere are the magic numbers you’ll need to determine when your roast is cooked to the degree of doneness you most prefer. The internal temp is when the roast should be removed from the heat. The roast will continue to cook so the temperature will rise during the rest period.

The tenderloin was huge! We cut it into individual filets and medallions. The meat is melt in your mouth tender and delicious. Any scraps or trimming we use for stew or soups. We appreciate the reusable and recyclable packaging.

TENDERLOIN arrived and I trimmed it myself and did a great job I must say. Then I tied it and seasoned and brushed with oil and grilled it! It needs to be turned after it has been seared after each turn but it was fantastic medium rare. I served with bernaise sauce - simply divine! Tender and very juicy...really good but requires a lot of trimming, so know what you are doing in advance.
