Here are the magic numbers you’ll need to determine when your roast is cooked to the degree of doneness you most prefer. The internal temp is when the roast should be removed from the heat. The roast will continue to cook so the temperature will rise during the rest period.

    Last year we had prime rib, delicious, but artery clogging. SRF staff recommended beef tenderloin, less fat and still delicious. My family didn't complain about the switch. We;ll be ordering another next year. Thank you SRF staff for your care and skill. Happy New Year.

    This was my first purchase from SRF. After a couple of weeks of anticipation, I pulled this thing off the smoker about an hour ago. This is the most incredible cut of beef I've ever made, full stop.
    Note: Lola's comment that some trimming is required is spot-on, I wasn't quite prepared for that initially, but after reading a blog on this website I was ready to go. Best to do a little preparation and you'll be proud of what you made!

  • Delicious Tenderloin roast

    The ordering process was easy, the shipping and tracking easy, and it arrived in beautiful shape in nice packaging. The roast was bigger than I expected and then the best part, so tender and flavorful and at a better price than those Chicago places. My Thanksgiving guests were just giving so many compliments. I needed to trim and tie myself but if you know what you are doing and have a sharp knife, this roast will be a star centerpiece for your special meal.

  • Excellent beef!

    The tenderloin was huge! We cut it into individual filets and medallions. The meat is melt in your mouth tender and delicious. Any scraps or trimming we use for stew or soups. We appreciate the reusable and recyclable packaging.
