Roast Temperature Guide
Here are the magic numbers you’ll need to determine when your roast is cooked to the degree of doneness you most prefer. The internal temp is when the roast should be removed from the heat. The roast will continue to cook so the temperature will rise during the rest period.
|Rare||Red center, very cool||110°F|
|Medium Rare||Red, warm center||120°F|
|Medium Well||Pink center||140°F|
|Well||No pink||Not recommended|
*Consuming raw or undercooked meats may increase your risk of foodborne illness. The USDA recommends an internal temp of 145°F and resting for at least 3 minutes.

Best prime rib roast!
This was the best dinner I have ever served my family! We love to cook and really enjoy food, so this was high praise from my husband and three grown boys. Juicy, tender, flavorful. A wonderful cut of meat. We will become regular customers, worth every penny!

Best Prime Rib ever!
I made my first Snake River Farms prime rib roast for Christmas dinner this year. I used fresh garlic, rosemary, S&P, and olive oil as a rub. I started at 500 degrees for 20 mins, then 250 (low and slow;) until the internal temp reached 120 (we like our meat medium rare). I had some hard core meat eaters in attendance who have had prime rib at some of the best places in Arizona. They reported that this was literally the BEST prime rib they have ever had!! You could cut the nest with a fork and the flavor was amazing, the marveling was perfect. Thank you, Snake River Farms! We will be ordering all of our prime rib roasts from you from now on!
