  • Prime Brisket?

I have always wanted to try your products based on the reviews on your website and comments from the BBQ forums I belong to. Your Black Friday deal finally made me rationalize the decision to pay the premium. I purchased your prime brisket and was disappointed. Did not see a difference with the prime briskets I have purchased from Costco. The edge marbling was minimal and the flat was very flat. Would not have been one I would have picked out of the cooler. In terms of preparation, I followed my traditional Aaron Franklin 50/50 recipe so I could truly compare with the many briskets I have smoked before. I set my RecTec at 225F with probes at IT of 200F. Once my alarms rang, I probed it to make sure it was like butter before removing Wrapped in towels for 3 hours before slicing. Flat was very dense and on the dry side. Flavor was ok. So much wanted to love this. Like buying a $200 bottle of wine for a special occasion. Sometimes you are wowed and say it is worth it, other times, you stick to the $50 bottle. I will stick with my Costco prime and pick myself.

SRF Team : Thank you for providing your detailed feedback, Steve! Our customer care team will be reaching out directly. We apologize for your disappointment and would like to make this right as this is not what we would expect! While we do not guarantee a flat thickness, we do understand it's importance and are always happy to review with our customers!

  • Half bone in ham

The ham was delicious and easy to make. Hopefully the brisket is the same. Will purchase again for special occasions. Thanks SNF

I have now circled the gamut on the SRF briskets; started with the Wagyu, then the choice, and lastly the prime. The prime is definitely worth the extra $10 over the choice but all three are excellent, and yes, one can tell the difference in the three. Neighbors are already asking when I am going to do another one! All of the briskets I have had from SRF have been the best butchered ones I have ever had. Only briskets I will use going forward!

  • The Brisket

You can buy a brisket anywhere. Sams, Costco, or local butcher and your results will vary. This brisket showed up, slightly frozen but perfect to trim and the cut and quality of beef was consistent with the effort any real Smoker puts into their dishes. Excellent service, delivery and product. Will and have ordered since. For those who question the price, it’s double what you pay elsewhere; but it’s also unquestionable and consistent and I will pay for that and you should too.
