Steak Temperature GuideHere are the magic numbers you’ll need to determine when your steak is cooked to the degree of doneness you most prefer. The internal temp is when the steak should be removed from the heat. The steak will continue to cook so the temperature will rise during the rest period.

Bought 4 cowboys steaks. Seasoned with sea salt. Seared in a cast iron skillet with a little vegetable oil and 1/4 stick butter on med heat for 4 min a side. Transferred to 350 degree oven turning once for about 40 min total. Removed from oven when internal temp registered 130 degrees. Covered with foil and let rest for 20 min. Best steak I have ever had. Out of this world! This was the smallest at 2.1 lbs. I have 3 left, one Bad Boy checks in at 2.8 lbs. Will buy again.

cooked the smallest of 4, 2.1lbs in cast iron pan with a little vegetable oil and half stick butter. 2 min. a side. put pan in 350 oven for about 15 min. a side. checked temp and pulled out of oven at 120 degrees. let steak rest for about 20 min. Awesome steak. Over the top! I have 3 left, one bad boy checks in at 2.7 lbs. These steaks are sick!
