Steak Temperature GuideHere are the magic numbers you’ll need to determine when your steak is cooked to the degree of doneness you most prefer. The internal temp is when the steak should be removed from the heat. The steak will continue to cook so the temperature will rise during the rest period.

OK, other cuts were superior
We thought the flavor in the petite filets was better.

Another Excellent Cut!
Finally got around to cooking these from my initial order. I am not really a huge Filet fan, but this bone in filet was absolutely delicious and as tender as could be. Pan seared in cast iron with EVO, good Irish butter, some shaved garlic and a sprig of Thyme and Rosemary. 4 minutes per side yielded a beautiful medium rare steak. I will be watching for these to go on sale. As a side note, both steaks I received were a bit larger than the advertised weight. I appreciate that type of lagniappe!

Great Steak but under weight
Ordered 2 of these. Both came in significantly under the 10oz advertised, both around 7/8 oz. The steaks were great, very tender and good flavor but disappointed by the sizes. Will not be ordering these again.

Much ado about nothing.
The Manhattan filet was much better, more marveling, better flavor. First time trying a bone-in filet, other filets tried are more favorable and you eat the whole thing without working around the bane. Better value leaving the bone out!
