These are 100% Berkshire pork (Kurobuta) for a deeper red color, rich flavor and juiciness. Our spare ribs are the choice of grill masters who prefer larger, meatier ribs than our baby backs.

*Please note: Kurobuta (Berkshire) ribs are smaller in size than conventional pork, and we do not recommend them for competitions.

Our spare ribs are a natural product and the actual weight can vary up to +/- 0.5 pounds.

Meatology

These ribs are sourced from the belly of the hog after the pork belly is removed. These are larger than baby backs and have a structure that is much more flat. The fat content is higher which adds flavor when cooked slowly.


Fast fact: Hogs can have up to 17 ribs which is 4 more than beef cattle.
