I've been looking at SRF products for a while now, and decided to start out with something small "cost wise". Defiantly well worth the money!! Loved it!

A little Disappointed
Sent out as a gift and was told the bacon was a bit fatty and certainly not Thick-Cut. I will stick to the local smoke houses for my bacon

pork bacon too fatty and lacked smoked bacon taste
We ordered 2 packs thru goldbelly. My husband who is a big bacon lover was disappointed. For the price we paid, there wasn't that much meat. we got lots of bacon fat in the pan. Also, the bacon tasted bland, It needed a bit of salt and smoky flavor. Must be a quality control issue.

I had to try this, despite the price. No doubt about it, the stuff is wonderful but the cost is hard to justify.

A premium product for sure...but
To start off I will say this is ABSOLUTELY a premium product. Many aspects are way above your average bacon. First off unlike many complaints my batch had a perfect meat to fat ratio (65:35 meat to fat) and while it did shrink lengthwise it also spread out wider. It was a decent thick cut and when eaten is tender and smooth where it just dissolves in your mouth and the bacon grease actually is cleaner in color and flavor then standard bacon. The issue though that seriously drags this bacon down for me is it is so minimally cured. There is so little characteristic bacon flavor in it that it almost might have been just raw pork belly. I understand they wanted a light cure to not overpower the taste of the premium pork but they could have bumped it up just a notch to the point it tasted more like bacon and less like a mild ham. As such for the price it just doesn't have the value it should. I can get almost as much enjoyment out of good $8-$12 lbs bacon from a local butcher making that more worth it to me. Perhaps if they upped it to a full 2lbs and in separate 1 lbs packs, for the same price, it would be much more worth it for special occasions or for use in recipes where the bacon is supposed to be a supporting role.
