What is Caviar?

Say the word “caviar” and it conjures visions of glamorous and exclusive events. This coveted delicacy is the roe, or eggs, from a large fish called sturgeon. Although true caviar is only sourced from sturgeon, other fish eggs are sometimes incorrectly referred to as caviar.

A luxurious way to serve caviar is by itself with a few simple garnishes, but it’s possible to savor its flavorful qualities as a compliment to other foods.  

About Tsar Nicoulai Caviar

We have partnered with Tsar Nicoulai, a pioneer of sustainable caviar located in Wilton, California. The company was established in the early 1980s and produces caviar domestically at sturgeon farms in California, Idaho, North Carolina and Florida. Their U.S. produced caviar is cured using only local Pacific sea salt and no other additives, which creates a pure caviar eating experience.

Tsar Nicouli has long worked to improve the standards of sturgeon farming. They have a longstanding relationship with Professor Jackson Gross, the head of aquaculture at UC Davis. This has resulted in innovative ways to raise sturgeon including the importance of nutrition and proper feeding. 

In addition to caviar produced in the U.S., the company also has a line of certified sustainable caviars produced in Greece. 

Not all caviar is created equal and Tsar Nicouli has an established grading process based on key characteristics. These include:

Butter of the sea atop the butter of land for a more intense richness. The malossol (little salt) in the Estate caviar helps cut through some of the richness, providing a well-rounded flavor experience. 

Wagyu Smoked Spicy Beef Sausage and Smoked Trout Roe
