Bring a large pot of salted water to a boil. Add the noodles and cook until al dente. While the noodles are cooking, prepare the sauce.
Add the olive oil to a large skillet set over medium heat. Once the oil is hot, add the garlic and cook until golden, about 2 minutes.
Add the coconut milk to the skillet, bring the mixture to a boil, and cook for 2 minutes. Reduce the heat to low, then whisk in the peanut butter, brown sugar, soy sauce and lime juice until smooth.
Drain the noodles and add them to the skillet along with the diced pork, tossing to combine.
Serve the noodles topped with sliced scallions and crushed peanuts.
