The Snake River Farms Gold Grade Strip Loin is an incredibly marbled and rare cut of beef that is reserved for our most discerning customers. The Strip Loin is the source of New York Strip Steaks, one of the most popular steakhouse cuts. The Gold Grade Strip Loin elevates the New York Strip to an amazing level with marbling that is rated on the Japanese Beef Marbling Scale at 9+. It’s a simple and rewarding experience to cut this large subprimal into steaks and roasts yourself. Since the marbling is so extravagant, we enjoy cutting smaller Manhattan filets for a luxurious and satisfying steak dinner. Each Strip Loin tips the scale at about 14 pounds.

Roast Temperature Guide

Here are the magic numbers you’ll need to determine when your roast is cooked to the degree of doneness you most prefer. The internal temp is when the roast should be removed from the heat. The roast will continue to cook so the temperature will rise during the rest period.

Rare Red center, very cool 110°F
Medium Rare Red, warm center 120°F
Medium Pink throughout 130°F
Medium Well Pink center 140°F
Well No pink Not recommended

*Consuming raw or undercooked meats may increase your risk of foodborne illness. The USDA recommends an internal temp of 145°F and resting for at least 3 minutes.

  • THE ONLY WAY TO BUY AMERICAN WAGYU NY STRIP STEAKS

    This was the first strip loin that I have had to butcher and the video they put out made it easy. It came in over the advertised weight but by the time I removed the connective tissue "Chain" and the excess "Toe" fat it was more like 11~12 lbs which is fine. The meat from the "Rare" end was incredible. I have given away several steaks as gifts to friends and family and everybody raved about it. I would get this again although I wish I had a bigger scimitar style butchers knife to cut the steaks off the loin roast with. Maybe I will have to invest in one!

  • Delicious but undersized

    The cut was well marbled as promised making for a very good meal. The video on the website was also helpful to show how to properly break it down. One issue was that it was several pounds underweight. Luckily the customer service team was able to quickly help but it was still disappointing none the less. Overall customer service 5 stars, this cut of meat 4.5.

  • Gold grade Strip loin

    The roast showed up weighing slighty more than advertised - I butchered it into Manhattan filets mostly about 2 inches thick as described - I made stir fry and ground beef with trimmings and rendered the tallow for cooking - my yield on steaks was higher than I thought.

    Beef was tender and buttery in flavor - I dry aged them for a few days lightly salted before cooking - rave reviews from all consumers

    Have pics but can’t upload them - marbling was better than anticipated

  • Fun to butcher, more fun to eat

    Bought two of these whole top loins and watched the SRF video on how to butcher them down to steaks and the process was quite easy. Served a bunch of the steaks for Christmas dinner, gave some away as gifts and saved some in my freezer. The American Waygu Gold Grade is so delicious and tender, we will be buying this item again.

  • Excellent primal cut, phenomenal marbling!

    I ordered this with the intention of dry-aging it for 45 days. I cut off and prepared a steak when it was fresh, and it was delicious as ot come. After aging for 45 days, the striploin produced the best steaks I've ever had, hands down, bar none. The marbling is amazing. The meat is super tender. I've been recommending SRF to all of my friends. Hats off to the hard working men and women who raise these cattle and provide these services, so "regular Joe's" like myself can enjoy high end beef at an affordable cost!
