Roast Temperature Guide
Here are the magic numbers you’ll need to determine when your roast is cooked to the degree of doneness you most prefer. The internal temp is when the roast should be removed from the heat. The roast will continue to cook so the temperature will rise during the rest period.
|Rare||Red center, very cool||110°F|
|Medium Rare||Red, warm center||120°F|
|Medium Well||Pink center||140°F|
|Well||No pink||Not recommended|
*Consuming raw or undercooked meats may increase your risk of foodborne illness. The USDA recommends an internal temp of 145°F and resting for at least 3 minutes.

The best roast EVER
As a family we get a Rib Roast a few times a year for holidays or big family get togethers. I convinced the family to give this one a try and we were not disappointed. Everyone was concered since it was not bone on like they were used to and that it might be dry. I did a reverse sear. Put it in the over at 175, smoker was busy doing ribs, until it reached 120 on the inside. I then got my BBQ as hot as it could to caramelize the outside. It came out SO amazing. When we were slicing people were expecting the giant slab of meat like they would normally get on a 7 bone roast. When we cut people 1 inch slices they were like, come on, I'm going to need more. They did not realize how rich and filling the Gold Wagyu would be. We had 16 people, with this one roast, coleslaw, baked beans, corn and we still had almost half the roast left. It's not the cheapest thing in the world but WELL worth the value! The family already wants one again for Memorial Day.

Graduation present well-received
Purchased for our son's med school graduation feast, as he's been serious about his food since he was a toddler. He pretty much watched it thaw while contemplating recipes. Ultimately he dry-brined, roasted low and slow over oxtail bones, followed with a very hot oven and it was perfect. Matched with Yorkshire pudding and an au jus. One very well-fed family taking a celebratory day out from the pandemic.

Wagyu Gold Grade Ribeye
Beautiful marbling, and flavorful wagyu. My guests were impressed with the waygu steaks on their plates, looking forward for my wagyu steak dinner paired with great wines. Sure to return for more wagyu steaks from SRF, hopeful for a great deal!

Best cut of meat ever
Cut into a roughly 4-5 lb roast and created 4 perfect ribeye filets with the remaining few lbs. It was over the top incredible. Not sure I can cook another Prime Rib with anything but this roast.
