Kurobuta Rack of Pork
The Snake River Farms rack of pork is the new, improved version of the prime rib of pork. This is the Kurobuta equivalent of a bone-in beef prime rib roast. We french the bones so they are exposed for an exciting table presentation and enhance the flavor. Creating a remarkable dinner for the holidays or a Sunday dinner is quick and easy with the rack of pork. Each natural length full rack of pork is between 10 to 12 bones in length and serves a generous service for 8 to 10 people.
For best results, we like to do a simply reverse sear. Season well, then roast at 250 degree until the internal temperature is 140 degrees. Cover with foil and allow to rest ofr 15 to 30 minutes. Finish in a 500 degree oven, then slice and serve.
Due to the unique conformations of this product, approximate weights can vary up to +/- 0.5 pounds.

I just made this roast for my son and his wife and family and it was so tender and moist. I followed the cooking instructions exactly and it was perfect. I seasoned with Montreal seasoning and within a half hour the house smelled wonderful and we couldn’t wait for dinner to be ready. I love the product packaging and delivery and the roasts frozen rock solid.

The king of pork roasts
I entertain often but have never featured a pork roast as the centerpiece of the meal. This Kurobota rib roast was the best piece of pig I’ve ever eaten. The back texture was superb, the internal marbling resulted in a texture and taste not available from commercially produced pork and the fat, well it’s taste is almost indescribable. If you’ve never tried a Kurobota cut of pig, you’ve never really enjoyed pork before. Dealing with Snake River Farms was a pleasure, service was efficient and the product was delivered as promised. Order soon for Christmas, you’ll be glad you did!!

Ordered the roast for a dinner party. Simple rub (kosher salt and brown sugar) the night before, then fresh ground black pepper before going into the oven. Cut into thick chops before serving. It fed 10 people with 4 chops left over. Rave reviews from everyone.

Brined and slow smoked in the style of traditional Kassler Ripchen. Amazing flavor and texture from the berkshire breed.
