Finnocchiona is a traditional salami made with fennel and white wine. Journeyman uses three different parts of the fennel plant; whole fennel seed, ground fennel and fennel pollen to achieve perfect results. The final addition of Sonoma County white wine creates a balanced flavor that pairs with a variety of wines and foods.
