  • Amazing picanha

    Quite an extraordinary piece of beef. I cooked it using a reverse sear method with only an overnight kosher salt cure. For me it was the perfect piece of beef for both flavor and tenderness

  • Surpassed Every Expectation

    For those that frequent Brazilian steak houses, know of the amazing flavor of Picanha. This is a different thing altogether. I sliced it with the grain into 4 main pieces, added coarse salt and put it in the sous vide bath at 129 for 3 hours. After a complete drying, I simply seared it over hot charcoal fire for approximately 90 seconds total. I can say that it was the most amazing combination of intense beef flavor with melt-in-your-mouth texture. Be sure to keep all or some of the fat cap on the slices! This will feed 4 hungry people.
