  • Brisket Cut

    The packaging included dry ice. It was on top of the brisket and in several spots there were dry areas. The fat trip was to close in these areas so I trimmed off the dry area exposing mussel, I tried covering those areas with some of the fat trim but it did cause excesses barking. Meat flavor though was excellent! I made a demi-glace which most did not use because the meat was so flavorful by itself.

  • Brisket

    Arrived one day earlier than expected but not a problem. This is the second time we have ordered. Meat was very good. My son smoked them. One was not sealed the meat was delicious. and leaked after thawed but the meat was delicious. We would order again.

  • Birthday Brisket

    3 December birthday's results in an annual brisket feast. I ordered a black grade brisket this year. After smoking it the cow finally released at 205 degrees. Rested for a few hours and once it hit the table no one was talking they were just eating. This was the best brisket I have ever cooked and will be a staple for my cooks in the future.

  • Marbling!

    This is my second black grade brisket. Actually it's still in my freezer ( along with 4 gold grade 8oz ribeye's! ). But I can't wait to put it in my smoker! The 1st one was fantastic! Great marbling and unmatched flavor!
