Steak Temperature GuideHere are the magic numbers you’ll need to determine when your steak is cooked to the degree of doneness you most prefer. The internal temp is when the steak should be removed from the heat. The steak will continue to cook so the temperature will rise during the rest period.

I was apprehensive to order this for Father's Day dinner due to my lack of confidence in myself to cook it correctly. I went ahead and ordered it, doing research as to how best to cook it. Ended up doing a reverse sear after vigorously seasoning it, cooked the massive 2" thick monster for 25 minutes/side on indirect heat (about 325 on my grill), then fired it up for about 2 minutes/side at about 550 to sear. PERFECT, nice medium (my taste). After only being able to eat about half of it, I touted this steak as the best steak I've ever eaten (and I've eaten at some restaurants where the steak alone was $200). Thanks SNF, I'll definitely be ordering a couple more along with the Prime Filet for my family.
