The Tri-Tip is a staple of Central California cuisine. This triangular cut from the sirloin is famous for its performance on the grill, especially when prepared on hardwood. While the tri-tip is lean, it’s bursting with flavor. In Santa Maria, the home of the Tri-Tip, this crescent shaped roast is prepared using salt and pepper and grilled to an ideal medium rare. The Snake River Farms Tri-Tip has the rich taste you expect from American Wagyu beef, yet is surprisingly lean. Serve in the classic California style with garlic toast, salsa and pinquito beans or use your favorite method to grill, braise or rotisserie cook this delicious roast.

Roast Temperature Guide
Here are the magic numbers you’ll need to determine when your roast is cooked to the degree of doneness you most prefer. The internal temp is when the roast should be removed from the heat. The roast will continue to cook so the temperature will rise during the rest period.

WOW! A new favorite.
Just grilled a tri-tip for the first time. Seared it on high then turned the traeger down to 275° and smoke grilled it. We have a new favorite, so tender and flavorful. Will definitely order again!!!

Quality ended up being fine, but in thawing the $75 piece of trip tip, I also found that blood leaked all over the place, luckily I caught it early. Not sure I would order again, given the price vs. expectation of the basics of sealing.

My family are Tri-tip critics since I have cooked countless cuts of meat in the past. I decided to put this to the test by cooking a normal $17 dollar cut of Tri-Tip against the $79 dollar cut at the same time. On a blind taste test, the family said the taste was the same but the premium cut was slightly more tender. I have decided for personal use, I would not spend the extra for this cut of beef. However, if someone was in a cooking tournament and needed a little extra edge then this might be the right cut you are looking for.

Disappointed for the first time
I'm a big fan of SRF and love their products, but I bought two Wagyu Tri-tips in April and cooked one yesterday. It was really tough. Actually tougher than the ones I bought before and the ones I have eaten in countries like Venezuela from Zebu cattle. I hope this one was just a misstep of the butcher, and hope the one I still have in the freezer does not result in another tough piece of meat.
