Snake River Farms Gold Grade Top Sirloins have a greater amount of marbling than other sirloin steaks, which makes these unique cuts intensely flavorful and rich with beefy taste. These steaks have the firm texture associated with the sirloin cut, but feature the same delicious essence of Japanese Wagyu beef. Available in 3 cut sizes, each sirloin is hand-selected and hand-trimmed to ensure you receive a memorable and delicious eating experience.

Beef Grading 101

This steak is American Wagyu Gold Grade, rated 9+ on the Japanese Beef Marbling Score (BMS)

Beef sold in the U.S. is graded by the United States Department of Agriculture (USDA). There are eight total grades and the top grade is USDA Prime.

All Snake River Farms American Wagyu beef grades above Prime. Special breeds of cattle like Japanese Wagyu are capable of producing marbling beyond their American counterparts. To grade this high level of marbling, we adopted the Japanese Beef Marbling Score.

Using BMS, beef marbling is measured on a scale from 1 to 12, with a 1 being Select beef and a 12 being the highest level of marbling possible.

Meatology

Loin

The sirloin, part of the loin primal, is located between the short loin and round at the top and back end of the animal. The sirloin contains top and bottom sections. Our sirloin filets are cut from the gluteus medius located in the top portion. Since they are round in shape, this is often referred to as a “baseball cut.”

Fast fact: If you order a sirloin in Australia and parts of Europe, you might be surprised when they serve you a New York or other steak cut from the short loin. The naming conventions for beef are not universal throughout the world.
