My order arrived several days late and was deemed unsafe to use. However, @Sabrina from Snake River Farms took care of me. I have LOVED skirt steak all my life, but I've never tasted anything like THIS. I think the BEST STEAK I have EVER eaten. Sous Vide at 135 degrees for 1-2 hours, pat dry and seared in cast iron skillet for 1 minute, seasoned with coarse salt only, cut on an angle after resting for a few minutes, and HEAVEN-so buttery and tender, the fat LEVEL is PERFECTION - I say-don't mess with PERFECTION! Even better than the ribeye! And I LOVE ribeye. But this is an other worldly experience. Like nothing else I've tried before. Just started using this company in June and have ordered 4X since. They have me for LIFE. OMG! Every cut is AMAZING! But for me the skirt is the golden chalise on the mountain top- Astoundingly delicious!

Yum, Yum, Yum
Tuesday is always tacos or fajitas in our house. I traditionally use a standard skirt but wanted to treat the family with a little something special. Marinated for 8 hours, flash fried @700F - 1 min 30 sec per side, then an additional 30 seconds per side. Rest 5 min and slice diagonally. Best Skirt Steak Ever! Love SRF will be ordering from you guys again and again.
