Finally cooked up this beautifully marbled skirt steak. Did a small amount of trimming to remove some silver skin and a tiny bit of extraneous fat. Marinated overnight in my families favorite fajita marinade, then to sous vide for 1.5 hours at 122*. Finished over a raging hot mesquite fire for 2 minutes and pulled.
Everyone at the tabled commented that these were some of if not the most tender, flavorful fajitas they had ever had. Would definitely order again!

Melts in your mouth
The marbling was like nothing I've ever seen in beef the flavor was intense and beefy while super tender. Prepared with only salt and pepper to really taste the beef. I'm going to order 4 next time.

A magical cut, picture don’t do it justice!
Don’t let people discourage you from paying top dollar for a skirt steak, it’s truly worth the money. Also the marbling on the steaks were much better than the picture shows.
I did a little with maranade, and for some reason this steak seems to obsorb salt a little better than a angus or Australian skirt.
