The picanha (also know as the coulotte or coulotte steak) is a hard-to-find cut of beef that’s well worth the search. It is triangular in shape and considered to be the most delectable meats for the grill in Brazilian steakhouses. Sourced from the sirloin cap, the picanha has a tender sirloin steak texture and rich, juicy beef flavor. We’ve left the fat cap intact to gently bathe the meat with its savory essence and keep the meat moist and tender.
Of course, the Snake River Farms picanha adds the intense marbling of American Wagyu to create an exceptional eating experience. Roast our picanha whole or cut thick slices against grain to make outstanding culotte steaks. No matter how you serve this uncommon cut you’ll love its distinctive flavor and delicious complexity.

I made this for new years day
Cut them into steaks. It was so amazing I may have ruined every other meal for the rest of the year by comparison.

Just the Best Dinner Ever
Bought two for Christmas Day Dinner with the entire family. I smoked them until they were Medium Rare, then sliced them thin. Delicious is too simple a word to describe the taste. It was the most tender and juciest roast I have ever had. Two roasts, not even one slice left over. I look forward to ordering one again soon.

I was beside myself with anticipation when I got the shipping email stating that my picanha had been delivered. I rushed home to find the best looking box sitting on my porch. I opened the best present I have ever bought myself to find the most beautiful piece of meat I have ever seen. After letting it thaw in the fridge for a couple days I cut it into 5 good sized steaks, vacuum sealed them, and placed them in my sous vide for an hour and a half at 130 degrees. I then cut them out of there bags and patted them dry with paper towels and seasoned them with coarse salt. While they were resting my dogs and house guests all started salivating uncontrollably while I prepared the charcoal to sear the steaks. It was finally time to start searing the steaks. The sound and smell of these beautiful, delicious pieces of heaven brought everyone out of my house to get a look. We all sat down outside and sliced in to what was hands down the best steaks I have ever cooked!! Now I get texts, emails, and phone calls biweekly from friends, neighbors, and strangers asking when Im going to open my steakhouse. Fantastic piece of meat that has made me a local celebrity. Expect many more orders from me in the future!!
