Amazing flavor, inconsistent weight
I ordered these as a Father's Day gift for my better half and was so impressed with the size and quality of the cowboy steaks (over 3 lbs each!). We seared the meat on the grill and then sous vide it for a few hours to a perfect medium rare and then finished it on the grill. We loved it so much that we sent a set to my brother in law and his arrived today much smaller, 2.0 lbs and 2.5 lbs. Still great steak, but didn't compare to the set we received ourselves.

I scheduled my delivery for a Friday, and planned to cook this steak that night. Unfortunately, FedEx screwed up and postponed the delivery to the following Monday. Of course by then the steak had thawed and I had to throw it out. Not to mention it screwed up our Dinner plans as well.
SRF was nice enough to refund 100% of my order cost, but I'm not sure I'll try a "mail order" steak again.

Cowboy Sous Vide
We’ve had 5 or 6 of these bad boys. The only way I cook them is the double sear / Sous Vide method. Dry salt brine overnight, sear in a cast iron pan, vacuum pack and Sous Vide 4 hours at 131 degrees, and then sear again on my sear zone bbq.
Sounds good right? Yep, everyone of them. Same gold quality, amazing flavor, deep rich fat, very consistent. Once you have a gold ribeye, you can’t ever go back (or even go out to a steak restaurant). I’m ruined.
That being said, I have 10 more in the freezer, a 8lb gold boneless ribeye, lots of black and gold trimming pieces, and my wife’s personal favorite, gold flat iron.
Btw, the description says the cowboy is 2.25lbs, but all of mine have been 2.9-3.9lbs.
