Great cut of beef
One of the best tasting cuts I have cooked at home.
I live in the NYC area, and the product arrived frozen. Packaging was exceptional. The steak was thawed in the refrigerator overnight as per the instructions. Since the cut is the outside skirt, I did need to trim the extra fat and membrane.
Seasoned the Skirt Steak with just smoked sea salt, and seared on a Lodge two-burner stove-top grill over high heat. Served with a red chimichurri sauce.
Very happy with the results!

By far best fajitas I have ever had, at home or in a restaurant!! The meat was amazingly tender and can't wait to make the other one I purchased.
