Roast Temperature Guide
Here are the magic numbers you’ll need to determine when your roast is cooked to the degree of doneness you most prefer. The internal temp is when the roast should be removed from the heat. The roast will continue to cook so the temperature will rise during the rest period.

Black grade ribeye
Didn’t meet my anticipation ,
thought it was a little on the tough side . Good flavor !
Wanted to give it another chance so we ordered gold grade. We love grilling on our green egg and was really hoping for some high end beef . Hope that our need order we placed will do that .

Tender and juicy. Cut into 2" steaks. Cooked on grill 800 degF for 2 minutes on each side and shut it down (Green Egg grill) and let sit 2 minutes. Come out Med Rare. Will be ordering again.

The best beef I've ever had
Decided to get this for my small family Christmas party. Cooked about 6lbs of it at 500 F for about 30 minutes, then lowered the heat to 350 F until internal temperature hit 130. Came out PERFECT medium rare. This beef was so tender and delicious. Paired it with the original zip sauce you can buy at most major grocery stores. Everyone complimented how good it was. Highly recommend this.

This beef did not disappoint. My regular vendor in Montana sold their business so I trusted my Christmas dinner to SRF.

An exceptional roast
I will start this review when the American Wagyu Black Grade Boneless eye of Ribeye Roast was received the roast from SRF (Snake River Farms). It arrived well packed with good insulation and still frozen. After thawing the roast it was removed from the primal packaging and a very very small amount of clean up trimming was done, less than an of ounces was trimmed to make it perfect.
For cooking prep of the roast; it was dry age for three days in a the refrigerator. On the morning it was due to be served the roast was removed from the refrigerator and coasted it with a very small amount of olive oil, seasoned it liberally with the Jacobsen Black Pepper infused Sea Salt and let it rest allowing it to come up to room temp. The roast was oven cooked at 200 degrees to an internal temp of 118 degrees. The roast was removed from the oven and roasting pan then lightly covered with foil to rest until reaching an internal temp of 128-130 degrees. During this time the rest of the meal was prepared. The drippings were used to make an au jus and the roast was finished on a 500+ degree grill for 5 min or so to get a nice sear on the outside of the roast, nothing more. It was sliced and served.
Due to the shape and cut of the eye of ribeye roast it was perfect for my guests as it was done from a perfect medium rare to a little less than medium accommodating all of the guest palates. The meat was cooked perfectly and the taste using only the Black Pepper Sea Salt as seasoning allowed the incredible taste of the Wagyu ribeye to be front and center. The marbling of the roast was exceptional and the taste and flavor did not need any additional seasoning IMHO, I wanted the flavor of the meat to be the showcase, not extra seasoning, your taste may vary. I would order this roast again without question from SRF.
A few notes about SRF customer service and their product. I will grant that this is more expensive than what you can get at your local mega mart, but the product your are receiving is far far superior. Ladies and gentleman you are getting better than Prime Wagyu Beef and it taste that way. It is an quite simply some of the best steaks and roasts you will ever have. You are also getting first rate customer service who will work with you selecting which roast will best fit your needs as each comes with different flavor palates and textures. Once you have decided on the roast, the shipping is easy and on your schedule. They ship your order to arrive on the date you need (up to 30 days out) well insulated and packed with dry ice to arrive frozen or just slightly thawed.
This was a very long review and if your still with me then I will finish by saying that SRF sells the highest quality Wagyu roasts and steaks and the customer service is as good or better than the product.
