Filet Mignon Roast
We are excited to offer the Snake River Farms Gold Grade tenderloin roast, available now on a limited basis. Also known as the Filet Mignon Roast, the Gold Grade designation ensures you will receive the highest level of marbling available from Snake River Farms. This roast is the entire tenderloin and can be prepared whole for a memorable meal for a large gathering. There is also the option to cut this into filet mignon steaks. The flavor profile of this unique roast features the butter-like flavor and texture associated with Japanese Wagyu beef combined with the hearty traditional flavor preferred by the American palate.
Due to the unique conformations of this product, approximate weights can vary up to +/- 0.5 pounds.
Roast Temperature GuideHere are the magic numbers you’ll need to determine when your roast is cooked to the degree of doneness you most prefer. The internal temp is when the roast should be removed from the heat. The roast will continue to cook so the temperature will rise during the rest period.

Bought the whole filet....cut out the center for New years dinner chateau and made 1 1/2 steaks out of the rest. The cut with a fork is an accurate assessment. Pricey but very good. Ill buy again when Im out.

Christmas Beef Wellington
Gold grade was absolutely delicious coated with a wild mushroom duxelle and wrapped in classic pastry. 5lb fed 10 for Christmas dinner with some leftover for breakfast with eggs the next am. Cooked on the rare side of medium rare - perfect.

Made for Christmas dinner, seasoned with kosher salt and pepper, pan seared it then roasted in a 500 deg. oven for 21 min., removed and foiled for 20 min., It came out a perfect medium rare and was delicious. It was a gold grade, can probably go with black the next time and no one would notice any difference.

Our Christmas Tradition
A few years ago I bought this and a gold grade prime for Christmas Dinner everyone agreed this beat the prime rib hands down and we only buy this ever since we have never been disappointed.

Can not say enough good things
Made this roast last night using the Parmigiana and Herb crusted recipe. Quite simply the best cut of meat my guest or friends have ever had. Cooked perfectly using the directions, and served medium/medium rare. Cut with a fork and had the most amazing flavor. It may be a bit expensive but it is worth it.
