Roast Temperature GuideHere are the magic numbers you’ll need to determine when your roast is cooked to the degree of doneness you most prefer. The internal temp is when the roast should be removed from the heat. The roast will continue to cook so the temperature will rise during the rest period.

This is my second Manhattan roast in the past 2 months. The first roast was fantastic, which resulted in my ordering of a 2nd. This roast, which we served on thanksgiving was very poor in comparison. Lots of silver skin that resulted in multiple very tough/chewy slices. Simply bad butchering.

Roasted 225 till 120 internal, rested 30min then hard seared. Perfectly pink throughout, wonderful marbling and fat cap rendered down. Buttery. Showstopper centerpiece. Shipment was delayed in transit by a blizzard- still frozen when arrived! Will do again and again.

It was good
What i can say the taste was very good. N.Y. Strip classically has a nerve that goes through part of that part of the cow. If you get that part the nerve is tough. I would regardless recommend the roast to anyone know there can be sections that are naturally tough. We would buy it again.
