Snake River Farms Black Grade Strip Loin
The Strip Loin is the source of the New York strip, one of the most highly prized steaks. The Snake River Farms Strip Loin is richly marbled with a nicely defined grain with a satisfying bite and a memorable, rich flavor. We’ve hand-trimmed each Strip Loin so there’s minimal waste. It’s easy to custom cut this full subprimal to the portion size that fits your mood or palate. For example, create decadent 2” New York steaks or cut thin ½” strips for a ridiculously great sandwich. Each Strip Loin weighs approximately 14 pounds and will turn your kitchen into an artisan butcher shop.
Due to the unique conformations of this product, approximate weights can vary up to +/- 0.5 pounds.
Roast Temperature GuideHere are the magic numbers you’ll need to determine when your roast is cooked to the degree of doneness you most prefer. The internal temp is when the roast should be removed from the heat. The roast will continue to cook so the temperature will rise during the rest period.

*Consuming raw or undercooked meats may increase your risk of foodborne illness. The USDA recommends an internal temp of 145°F and resting for at least 3 minutes.

Best strip of my life
First enjoyed in Jackson WY, FEB2018. Found the SRF online site, after much 'questioning' of economics, ordered the strip loin roast, hand cut in to steaks ( a lot of work with a meat saw on frozen beef, but worth it ), and have shared for two different groups of friends, ALL of us taste these as absolutely wonderfully delicious. Plan to use SRF as primary beef supplier in our future. Bon Appetite

My customers love them! Great product. As a private chef I haven't found a way to use the vein steaks. Any suggestions?
