    I had 2 of these in the freezer and decided to try something a bit different with the first one which weighed in at 2.3 LBS.

    Pounded it out just a bit to make it nice and uniform. On one side laid down a light layer of fresh minced garlic, then a layer of baby spinach, then a layer of nice prosciutto, then a layer of smoked Gouda Cheese. Rolled it up tight and tied off with butchers twine. Seasoned outside with Salt, Pepper and a bit of Montreal Steak Seasoning. It then went on the pit on indirect heat and some light Mesquite smoke for about 20 minutes. Finished it off over direct heat, rolling around after about 90 seconds on each stop till a nice medium throughout.

    This thing was indescribably delicious! With one slice of a knife you could enjoy a mouthful of fantastic flavors and textures. This was washed down with a really nice Pinot Noir.

    While the Cadillac Fajitas we generally do with SRF Skirt or Flank are always Top Notch, this meal was on an entirely different level.

    The 5 adults who partook of this feast all raved about the end product and asked when I was going to do another one?

    Sous vide unseasoned for 48 hrs at 135, seasoned with kosher salt, pepper and garlic, seared on hot grill. Unquestionably the best beef we have ever had. Thanks SRF!

  • Impressive!

    Best flank steak I ever had. I used it for some mind blowing fajitas. It ate so nice that we are getting more to use as straight steak dinner. So tender and it takes flavors well.

    What a yummy steak. It was beefy and well marbled. We put salt, pepper, garlic powder and grilled it to a medium well. This was one of the best steaks I had in a long time.
