Steak Temperature GuideHere are the magic numbers you’ll need to determine when your steak is cooked to the degree of doneness you most prefer. The internal temp is when the steak should be removed from the heat. The steak will continue to cook so the temperature will rise during the rest period.

IS THIS SIRLOIN?
I ordered these in 10 oz size not really knowing what to expect. I should have just expected SRF to knock our socks off again! Sous Vide @ 122 for 90 minutes with salt, pepper, garlic and a pat of butter then to pit for sear and some light smoke to a nice medium rare. This was probably the best piece of sirloin I have ever eaten. Awesome beef flavor and more tender than anticipated, it is after all sirloin .....right? Try these out, they will surprise you!

I was really looking forward to these steaks, but experienced a major let-down. I cooked these sous vide (medium rare), then finished them in a cast iron pan. They were cooked perfectly, and the taste was good, but the meat was incredibly tough. I have purchased way more tender top sirloin from less 'flashy' breeds for less than half the price at my local grocery store. Waste of money.
