I ordered the gold grade for my first try at a brisket. It was incredible! Everyone at the party said it was one of the best they've ever tried. I seriously doubt I'm a savant of smoking brisket, so the credit goes completely to the SRF meat. Thanks for making me look like a star!

Just as promised
I don't review much but thought it worthy to comment here on the care of the package I received today. From Idaho to Central Texas and frozen solid. Well packaged, plenty dry ice and a perfect cut of meat from what I can tell at this point. We did a 16-18 Lb Gold Brisket and it came in at 17.2 lb. Going to get about 10 days of wet aging on this when thawed in the fridge back to normal and take it to a competition next weekend. You see a lot of shotty work these days (unfortunately), so I am very pleased with the care put into the shipping and packaging. Thanks.

Thinnest flat I have ever cooked
The only reason it gets 2 stars instead of 1 is because it had flavor. Ordered brisket for a competition and was extremely disappointed with the thickness of the flat especially when considering the price. I would have never chosen this brisket out of a pile if I were shopping, but that is the chance we take ordering on the net. Thin flats were the reason I changed buying from Mr. Brisket to SRF. I buy about 20 per year for comps, and about 10/year for other events. I have had a couple of decent SRF briskets, but the gold was not worth the money. I am trying another black today, but if it is from a skinny steer I will look for another source-again.
