I received this Picanha well-wrapped, in a well-insulated box frozen, with a nice cooler bag with dry ice keeping it cold. I let it thaw slowly, over a couple of days. I removed the silverskin and sliced it with the grain nto five 1-1/2" steaks. I seasoned them then used a cold smoke gun on them for 15-20 minutes, vacuum sealed them, then into the sous vide @ 135 for 4 hours. I ice bathed 4 of them for later. The last, I heated a cast iron skillet on med high, patted the steak dry, then seared first the fat, then the steaks--this took less than 4 minutes.
So, how was it? I can honestly say this was the best steak I have ever eaten. Tender. Juicy. Flavorful. The fat melts in your mouth. Cut with the grain when slicing it for steaks, across the grain when eating, it will nearly melt in your mouth. Excellent. Truly the best steak I have ever eaten.

Highly Recommend PICANHA
Sliced 1” steaks with the grain, medium rare on the grill - awesome! Average weight just under 4lbs. Delivery and packaging was top notch, shipments was delayed for a day in route, still frozen solid - highly recommend.

Better than Brazilian steakhouse
Supposedly this is a tough cut of meat but whatever magic SRF does with their cows made this steak like butter. It still has the flavor of picanha but is melt in your mouth tender. The steakhouses cut it thin because of the toughness, I cut it in thicker slices and it was still perfect! I bought some of this to grill for the first time with some friends and unfortunately we had to cook to closer to medium well to accommodate for some of the guests but it was still super tender. Will definitely order again.
