Roast Temperature Guide

Here are the magic numbers you’ll need to determine when your roast is cooked to the degree of doneness you most prefer. The internal temp is when the roast should be removed from the heat. The roast will continue to cook so the temperature will rise during the rest period.

    Seared it at 450, lowered temp to 325, cooked to internal temp of 125, let it rest 20 minutes, and it was perfect meal for the four of us. The flavor of the beef was superb. Simply seasoned with S & P.

  • 2.7 Lbs of Flavor

    Received one larger than indicated (2.7 lbs). Reverse seared and turned out great. Medium rare almost throughout, one end a little more towards medium (which my wife enjoyed). Butchering was great, with it tied off nicely to keep its shape and uniformity when cooking. SRF wet aging always creates a deep flavor that is unmatched in other steaks. Great product, premium price but worth it for special occasion.

  • Manhattan Roast

    I bought three of these for Christmas gifts. The recipients were overwhelmed with the quality of the roasts. All said it made their Christmas Eve/Day meal that much more special. I will definitely order this again and highly recommend it to all.

  • Poor butchering

    This is my second Manhattan roast in the past 2 months. The first roast was fantastic, which resulted in my ordering of a 2nd. This roast, which we served on thanksgiving was very poor in comparison. Lots of silver skin that resulted in multiple very tough/chewy slices. Simply bad butchering.
