Steak Temperature GuideHere are the magic numbers you’ll need to determine when your steak is cooked to the degree of doneness you most prefer. The internal temp is when the steak should be removed from the heat. The steak will continue to cook so the temperature will rise during the rest period.

Not what I expected
I bought several 8oz sirloin expecting them to be amazing. I work and manage a steakhouse and was hoping to introduce a new amazing product. My choice sirloin is more tender than this at $4.59/lb. These were tough and not much different in flavor at all. I tried grilling and the reverse sear method. I let them thaw out over night and then let them reach room temp before cooking for best outcome. I feel like I just wasted $250 on these. I now ordered some pork, ribeye filet, Manhattan steak, and filet. All of which gold grade. I hope I am happier with these especially since it's mainly for a business

Rec'd 2 of these for a birthday present. Salted about an hour before grilling, used a coffee rub. Most amazing sirloin I have had. Even the wife thought I was a master chef. Melt in your mouth. Amazing!

I bought a couple of these to try them out on my wife. They were really great and I have two more to try out later! I really like how they cooked when i reverse seared them. I can't wait to cook the Cowboy Rib Eyes!

Wow! Not that great!
I let this steak defrost overnight and then I salted it 12 hours prior to cooking. I didn't sous vide because it was only a 6oz. I grilled this to a medium rare and I was not impressed by taste or texture. I purposely purchased an inferior cut because this was supposed to be wagyu. I may have to try the ribeye to get that marbled flavor.
