Roast Temperature Guide
Here are the magic numbers you’ll need to determine when your roast is cooked to the degree of doneness you most prefer. The internal temp is when the roast should be removed from the heat. The roast will continue to cook so the temperature will rise during the rest period.

|Medium Rare||Red, warm center||120°F|
|Medium Well||Pink center||140°F|
|Well||No pink||Not recommended|
*Consuming raw or undercooked meats may increase your risk of foodborne illness. The USDA recommends an internal temp of 145°F and resting for at least 3 minutes.

Best Prime Rib Ever
This was by far the best prime rib I’ve ever had. Prior years I ordered the boneless gold grade prime ribs which were also excellent but his bone in was fantastic. Thank you for making our New Year’s Eve a delicious one!

Absolutely nothing compares!
For over a decade (now that I'm all grown up!), I've been making a bone-in prime rib roast for Christmas - often times at the whim of what's been available at Costco, from Choice to Prime. Last year I ordered straight from D'Artagnan through Costco (not bad), but this year I decided to outdo myself and order American Wagyu directly from Snake River Farms, which I've seen on the menus at many of the finest restaurants here in the Bay area.
And WOW! I started from the 21-day wet age, and then salted and dry aged it another 30 days. Trimmed and encased it in fresh minced garlic a couple days before cooking, and final prep was a light dusting of flour. Seared at 500F for 15 and then dropped to 300F until rare+.
After letting it rest, I cut 3/4 inch slices and it was amazing. Rave reviews from young and old alike. It was melt in your mouth deliciousness.
I can no longer look at another piece of beef in the same way.

Amazingly Flavorful Prime Rib
I was given one of these giant prime ribs to test out and it was one of the best pieces of meat I've eaten. It was well-marbled, super flavorful, and really tender. My family eats prime rib for Christmas every year and it put all the others to shame. I'll definitely turn to this again when I want to have a special dinner.

Best Prime Rib ever!
I recently prepared this prime rib for a get together with friends and it was a showstopper. Everyone commented on how it is the best prime rib they have ever had. I am figuring out my next get together in which I can make another one. A real showstopper. Incredible product.
