Low and slow on kettle grill for about 4.5 hours yielded delicious meat. Very rich, lots of fat waste that couldn't be trimmed off before the cook and even more that was trimmed. Net weight of meat cooked was less than 6 pounds. Lotsa bone and fat.

Compete with them or be beated by them!
We competed in Memphis in May and did a great job. My only concern is that they are too expensive. This ribs are one of the highest grade for competition or for a luxory lunch. Too pricy for most people to afford for your regular barbecue.

absolutely the best rib ever. smoked for 5 hrs and results were perfect. rich flavor beyond compare. Do these at least once in your life. Would recommend that each 3 rib section be individually sealed for those of us who can't eat 6 ribs at a seating.
