  • Outstanding

These ribs were outstanding. A little trimming before hitting the smoker at 275 and they came out fantastic. Worth every penny, I can't say enough good things about these.

  • Wonderful

We chose to separate and rest these in a sous vide bath before charring them over charcoals. We sliced the meat from the bones like filets then sliced them and served them. So tender and juicy. Everyone was blown away.

  • Wagyu Beef Ribs

Came as promised frozen and included a travel bag (zipper was broken though) other than that the ribs were a hit. After seasoning with salt and pepper I grilled them for several hours to get medium rare with a light smoke taste. I used the trimmings to make a great tallow which I'll use for the steaks.

  • Disappointing

I smoked these on my Yoder smoker yesterday and was very disappointed. The meat was extremely fatty to the point several members of my family could not even eat them. I typically love short ribs and like the buttery flavorful texture but these were too fatty even for my liking. I have smoked lower quality short rib racks without any issues.

I was especially disappointed because the first item I ordered from SRF (Coulette Steak), I enjoyed so much I immediately placed another order. I hope the quality of the other items I ordered is more inline with the Steak and not the Short Ribs.
