What is filet mignon? Sometimes referred to as a tenderloin steak, filet mignon has a fine buttery texture and a wonderfully mild flavor. Sourced from the loin, this is unquestionably the most tender of all steaks.
Steak Temperature Guide
Here are the magic numbers you’ll need to determine when your steak is cooked to the degree of doneness you most prefer. The internal temp is when the steak should be removed from the heat. The steak will continue to cook so the temperature will rise during the rest period.

10oz. Wagyu Black Filet Mignon is pure Bliss!
My friend who is a champion BBQ Pit Master referred me to SRF for ordering steaks. My wife and I cooked the 10 oz Black Filet Mignon the steakhouse method provided in the package instructions and we were blown away with the results. This Filet Mignon was pure bliss and perhaps the best steak we ever had! This is an expensive steak but our friend who shared the experience with us said it was hands down better than something similar he had tried at Ruth Chris. Next time I order this I want to see if adding the Chef's gold enhances the experience.

Wagyu Black Filets
Very noce and tasty. Easy to cook, the filets came out perfect. I liked the different shapes (tall vs thin) because the tall were rare and the thin were medium rare at the same cooking time so everybody got what they wanted with minimum fuss on my part. The order was shipped to me exactly when I wanted it.

The filets were indeed quite good, but not what I would say were the best I've ever had. But I've had some very good steak, so I might not be a fair judge. I probably should have gotten the Gold instead of the Black grade to try their best.
The biggest problem I had was the difference in the cuts in my order. I got 2 really pretty, tall cuts, and then 4 that were much thinner, and while I can compensate cooking time, plating was awkward with the stark difference. For the premium price of this stuff, I want a nice presentation too. Like the pictures on the site.
But it was very tasty !

Meh - good for the cut of beef
They were decent. Good for filets. Biased somewhat, since filets are one of my least favorite cuts - I don't find them flavorful, got these because the wife likes them and they were on sale - but they were certainly tender and cut at a nice thickness. More marbled than any filets I'd ever seen.

The filets were very tender and tasty. Unfortunately the two that I had ordered leaked blood all over my refrigerator as the packaging had holes in both of them.
