Corned Beef Brisket
I read all the reviews, from salty to size... I will say, this is the best corned beef I’ve had. Very tender and equally flavorful. I gave 4 stars just for the portion sizing. I understand when you say approximately 2.5 pounds... I ordered 2 and one was exactly 2.5 and the other was 1.6. 1.6 is not approximately 2.5! Was very disappointed to see the 1 brisket at 1.6, but I will say, the packaging and the care that was taken from the shipping department was top notch. The nice bag that they were shipped in was a very nice touch. I just wish they were both around the 2.5 lb range as advertised. I will not hesitate to order from SRF again because I hope this was just an oversight. Again, was a very good cut of meat and was very satisfied...

Black grade corned beef
I have purchased four 2.5lbs pieces of this corned beef and it is the best! My wife loves it too. Simmer gently in a dutch oven on the stove for 3 hours covered. Tender and moist. The only reason I can't give it 5 stars is the last order was not black grade, no marbling in the meat. I am a long time customer and I know the difference. I am ordering again and hope to get that wonderful black grade quality.

Size and quality was inconsistent
I purchased two Wagyu corned beefs and received them promptly and well-packed. Unfortunately, one corned beef was the size and thickness of my hand and weighed 1.3 pounds. The other was much larger and weighed 3.8 pounds and was mostly not marbled as Wagyu should be. I've cooked Wagyu many times before, large and small quantities, but never a piece of Wagyu beef that needed to cook low and slow that was so thin and tiny. (I don't steam!) Needless to say, after smoking at a temp of 215-225 degrees for a few hours, the tiny hand-sized corned beef, even while wrapped, ended up hammered and leathery by the time the internal temp was 165 (I was hoping to get it to the 185 + range). The second, larger, corned beef with the lack of marbling ended up reaching 175 degrees before it dried out and turned to leather. Perhaps the product description should say 'Do not smoke these tiny baby hand-sized flats on smoker or you'll be wasting your money.' I won't be buying them again. It's cheaper for me to order Pastrami Sandwich kits from Zingerman's and I don't have to wake up at 2:30 in the morning to fire up the smoker.

I cooked the corned beef roast exactly as instructed and it turned out so tender and flavorful. Perhaps a bit too much fat on it. The leftovers made wonderful sandwiches.
